Easy Lunch Idea For Work

Planning to use leftover pork chops can be fun and healthy!  Here is an easy meal idea for lunch at work.  I like to pack my lunch to save time and money.  Using cubes of pork on a salad is an easy, unique way to mix up any mealtime routine.

My family likes to grill pork chops and make pork roasts.  Cubes of pork from each of these meals make a great salad the following day.

The pork chops in this picture are lightly sprinkled with salt, pepper and garlic powder.  My favorite tip to share is how to properly cook the pork.  The secret is to make sure your pork still has a blush of pink in the center and is cooked to 145 degrees Fahrenheit using a meat thermometer.  Properly cooked pork will be tasty and delicious at your first meal and make great leftovers!

After finishing my evening meal, I like to cut up my pork chop into cubes.  I store the pork in a reusable container along with any juices.  I use a separate container to store the salad overnight.  My favorite salad ingredients are blue cheese and cranberries.  So, on a busy morning all I have to do is grab two containers and head out the door.

Another reason to top your salad with pork is because it is a lean protein!  Today’s pork is 16 percent leaner and 27 percent lower in saturated fat compared to 20 years ago.
