One Dish Meal – Loaded Baked Potato

I love easy one dish meals like these loaded baked potatoes topped with pulled pork.  I had a crowd to feed over the weekend, so I made BBQ pulled pork sandwiches from the recipe that I shared earlier on this blog.

I simply used the leftovers, added butter, sour cream and cheese to load up these delicious baked potatoes.

I washed the potatoes, drizzled them with olive oil and a little sea salt and pepper.  Then I wrapped them in foil and put them directly on the oven rack at 350 degrees F for about an hour.  When you can insert a fork and they fall off the fork they are soft and ready to eat.

I’ve also had good luck wrapping potatoes in foil and turning the slow cooker on low for 4 to 8 hours to make baked potatoes.

We even had enough pulled pork and potatoes to take to work and heat up in the microwave for easy lunches the following day.
